Bacon baskets

Ingredients

24 pcs bacon slices (approx. 2-3 packs)
The slices are arranged in the muffin tin cups, 2 slices per cup.

Mushroom filling, for the bottom of the bacon basket
approx. 400 g button mushrooms
1 large onion

Mashed potato filling on top of the mushrooms
1 pack Mummo’s instant mashed potato powder
50 g cold-smoked reindeer mince

Preparation instructions

Slice the mushrooms and dice the onion. Sauté them in fat in a pan for a few minutes.
Prepare the mashed potatoes according to the mashed potato packet’s instructions, but use 6 dl of water as the liquid.
Add cold-smoked reindeer mince to the mashed potatoes. Mix until smooth.

Fill the bacon cups first with the mushroom filling and pipe the mashed potato mixture on top. Sprinkle grated cheese on top if desired. Bake at 225 degrees in the oven approx. 10 min.

After baking the portions can be transferred onto a plate. Serve immediately with salad.
