Creamy leek and potato soup

Ingredients

1 pkg Mummo’s mashed potato powder
1.25 l water
2 dl cooking cream
1 tbsp butter
1 yellow onion, diced
150 g leek, sliced
2 garlic cloves, crushed
100 g chive cream cheese
1 ½ tsp salt
a pinch of black or white pepper
bacon for topping the soup

Preparation instructions

Sauté the onions in a pot in a little fat. Add approx. half of the water and simmer for 10 min.
Puree with an immersion blender. Add the remaining water and bring to a boil. Stir in the mashed potato powder and let thicken. Finally add the cream cheese, seasonings and cream. Bring to a boil and check the seasoning.

Brown the bacon to be sprinkled on top of the soup in a pan.
Serve with salad and bread.
