Lovely, juicy cupcakes hide peach inside. Worth trying!
1 pack (70 g) Mielihyvä potato flakes
2 eggs
1.5 dl sugar
1 dl melted butter or margarine
2 dl gluten-free flour (or wheat flour)
2 tsp baking powder
2 tsp vanilla sugar
2-3 dl peaches, cubed
Mix the eggs and sugar. Add the fat. Mix the dry ingredients together and add them to the egg-sugar-fat mixture.
Add the peach pieces, stirring gently.
Divide the batter into about 20 muffin/cupcake tins (depending on the size of the tin, but about halfway) and bake at 225 degrees for about 15 min.
Decorate the cooled cupcakes, e.g., by piping whipped cream, flavored quark, etc. You can grate white chocolate and make a bird’s nest, into which “eggs” such as all kinds of small sprinkles are suitable.
