Mummon lemony potato cake

The velvety, lemony potato cake tastes of spring. The perfect cake for Easter and the time of light – let the celebrations begin!

Ingredients:

140 g i.e. 2 bags Mummon Mielihyvä -potato flakes
1 dl gluten-free flour or regular wheat flour
2 dl sugar
1 tsp vanilla sugar
1 tsp baking powder
4 egg yolks
50 g soft butter
2 dl cream
1.5 dl milk
grated peel of 1/2 lemon
4 egg whites

 

 

Preparation:

Mix the dry ingredients together. Add them to the cream-milk-yolk mixture. Stir in the soft butter and lemon zest. Whisk egg whites to stiff peaks and gently fold into the batter. Pour the batter into a greased and floured pan.
Bake at 180 degrees for about 60 min. Rectangular pans are most recommended.

Sprinkle powdered sugar on top or make a glaze from powdered sugar and water.
If you want to color the batter, use e.g. food coloring.
