Mummon potato-cheese pies

Ingredients:

Potato dough:
1 dl Mummon Muusi potato powder
3 dl wheat flour
150 g margarine (butter)
1 tsp baking powder
1 dl water

Potato filling:
about 300 g Mummon potato-onion mixture
1 tbsp oil or butter for frying
a pinch of black pepper
1/2 tsp salt
100 g grated cheese
2 dl cooking cream
2 pcs eggs
2 tsp mustard

Preparation:

Prepare the base dough first:
Measure the dry ingredients into a bowl and rub the fat into them until a crumbly mixture.
Add cold water and mix until smooth. Let the dough rest in a cool place while you prepare the filling.

Filling:
Sauté the potato-onion mixture in a pan for a few minutes and season with salt and black pepper.
Mix together the eggs, cooking cream and mustard.
Divide the pastry base into 12 pieces. Grease a muffin tin and press the dough pieces along the sides and bottom of the cups.
Prick holes in the bottoms e.g. with a fork. Divide the potato mixture into the dough cups and add grated cheese on top.
Finally pour the cream-and-egg mixture over the pies.
Bake the pies on the lower rack of the oven at 200 degrees for about 30 min.
