Mummon potato pancake

Ingredients:

50 g (approx. 1 dl Mummo’s mashed potato powder)
2 dl wheat flour or 2 1/2 dl, if you use gluten-free flours
6 dl milk
3 eggs
1/2 dl sugar
1/2 tsp salt
50 g melted butter

Preparation:

First mix the eggs, sugar and milk together. Add the dry ingredients mixed together to the egg-milk-sugar mixture.
Finally add the melted butter to the mixture. Stir all the ingredients until smooth and pour onto a baking tray lined with parchment paper.
Bake in the oven at 250 degrees for approx. 15 min or until the surface gets a golden brown color.
You can serve the pancake with sweet or savory fillings.
