Mummon quick Christmas loaf

Ingredients:

70 g Mummon Delight potato flakes
5 dl buttermilk
1 1/2 dl syrup
2 dl rye flour
4 dl wheat flour
1 tl baking powder
1 tl baking soda
2 tl salt
2 tl ground anise
2 tl ground fennel

Preparation:

Measure the buttermilk and syrup into a mixing bowl and warm in the microwave until hand-warm.
Mix the dry ingredients together and add to the buttermilk mixture, stirring gently.
Pour the batter into a 1 1/2-litre loaf tin and bake at 175 degrees for about an hour.
