Mummon Twisted Puikula Mash

Ingredients:

for 5-6 people

1 bag (500 g) Mummon Puikula mashed potatoes
2.5 dl milk
1 dl sour cream
50 g butter
1 tsp salt

1 pack (170 g) bacon
1 pc spring onion
1 jar (approx. 200 g) borlotti beans or chickpeas
1 dl pickles
grated Parmesan
30 g butter
½ dl chives, finely chopped

Preparation:

1. Cut the bacon into small cubes, finely chop the spring onion and drain. Rinse the beans/peas.
2. Put the bacon cubes into a cold pan and fry until crispy. Add the spring onion and the beans/peas to the pan and fry for a few minutes. Set aside.
3. Next make the mash. Combine milk, salt and butter in a saucepan and bring to a boil. Add the Puikula mash mix and bring to a boil while stirring.
4. Finally stir in the sour cream and whisk until smooth. Let simmer with the lid on while you warm the bacon-bean mixture.
5. Portion Mummon Puikula Mashed Potatoes onto a plate and put a few pats of butter on top of the hot mash. Spoon the bacon-bean mixture over the mash. Add the gherkin cubes on top of the dish and finally grate Parmesan over it.
6. Garnish with chopped chives.
