Nut muffins

Ingredients

1 dl Mummon Genuine Delight Potato Flakes
125 g margarine
3 dl sugar
3 eggs
2 dl hot water
100 g ground hazelnuts
3 dl wheat flour
2 tsp baking powder
2 tbsp cocoa powder
1 tsp vanilla sugar
1/2 dl milk or cream

For decoration
Sugar-water icing and hazelnuts

Preparation

Cream the margarine and sugar. Add the eggs one at a time while beating. Stir the potato flakes into hot water and let cool for a moment. Add the slightly cooled mashed potato to the batter. Mix until smooth.

Combine the dry ingredients and add them and the milk to the batter. Mix until smooth and divide the batter into paper muffin cups.

Bake in the oven at 200 degrees for about 20 minutes.

Decorate the cooled muffins with frosting and chopped nuts.
