Potato pancakes with strawberry filling

Ingredients

Pancake batter
1 pack Mummo’s instant mashed potato powder
10 dl milk
4 eggs
6 tbsp wheat or gluten-free flour
butter for frying

Filling
2 dl whipping cream
1 tub flavored quark
500 g strawberries

Preparation instructions

Mix the batter ingredients together. Let absorb approx. 30 min.
Stir until smooth and fry pancakes from the batter on a pancake pan.

Whip the cream into whipped cream and chop the strawberries. Mix all the filling ingredients together.
Spread the filling over the thin pancakes and roll up.
