Smoked fish pancakes

Ingredients

2 dl Mummon Delight potato flakes
2 eggs
6 dl milk
2 dl wheat flour
½ liquid margarine
150 g gutted smoked fish
1 tsp tarragon
for frying oil or margarine

Preparation

Whisk the milk, potato flakes, wheat flour and oil into the eggs. Let the batter rest for ½ hour.

Add the chopped smoked fish and season.

Fry the thin pancakes on low heat.
