1 bag Mummon crispy pan potatoes 500g
packet of chorizo sausage (or other seasoned sausage)
small red onion diced
red chili chopped
150 g black beans from a can (drain the liquid)
salt, black pepper and green herbs to taste
4 eggs
Pour Mummo’s pan potatoes into the pan and fry over low heat for about 5 min or until the cubes have a nice color on the surface.
Cut the sausages into pieces and add to the root vegetables in the pan. Continue frying for a few minutes.
Add the onion cubes, beans and chili strips and continue frying for a few more minutes.
Season with salt and spices.
Fry the eggs separately in a pancake pan so that you have eggs ready for four servings.
Serve immediately.
