Yellow quark pie

Ingredients:

1bag / 80 g Mummon Delight potato flakes
100 g butter or margarine
1 dl sugar
1 egg
1½ dl gluten-free flour
1 tsp baking powder
2 tsp vanilla sugar

Orange quark filling:
200 g orange quark
1 dl whipping cream
1 tbsp sugar
1 tsp vanilla sugar
1 tbsp potato starch

 

Potato-Shortcrust Base:

Beat the butter and sugar until fluffy. Mix in the egg first, then the dry ingredients mixed together. Press the dough, using flour as an aid, onto the bottom and sides of a greased tart pan (diameter 24 cm).

Filling

Mix the filling ingredients together. Pour the filling over the base. Arrange peach slices on top of the filling. Instead of orange quark you can use plain quark. In that case, add about 1 tbsp of lemon juice to the filling.

Bake at 200°C for about 30 minutes.

If the surface browns too much before it is done, protect the pie with foil or by placing an oven tray over the pie toward the end of baking.
