Brita-cake Mummon style

Lovely summery Brita cake in Mummon style! Replace some of the flour with Mummon Mielihyvä flakes.

Ingredients:

Base:
1 dl Mummon Mielihyvä flakes
1 dl wheat flour
2 tsp baking powder
150 g room-temperature butter/margarine
1 ½ dl sugar
4 egg yolks
1 ½ dl milk

Meringue:
4 egg whites
2 dl sugar

Filling:
4 dl whipping cream
1 tub quark / 1 tub mascarpone
1 tsp vanilla sugar
2 tbsp sugar

Fresh berries or fruit can be used for decoration.

Preparation:

Begin by making the base dough. Cream the room-temperature butter and sugar together. Add the egg yolks one at a time to the creamed mixture, beating well. Mix the dry ingredients together. Add the milk and flour mixture alternately to the batter. Spread the batter onto a greased parchment paper on a baking sheet.

Beat the egg whites until frothy. Gradually add the sugar and continue beating until the mixture is glossy and stiff. Spread the meringue mixture evenly over the batter.

Bake in the oven at 175 degrees for 20-25 minutes, until the meringue surface is light brown.

Let the base cool well.

Prepare the filling by whipping the cream to whipped cream. Add the quark/mascarpone and sugar. Cut the cake base into two parts and transfer one part carefully to a serving platter. Spread half of the whipped cream as an even layer over the base and add half of the berries/fruits on top of the cream. Place the other part of the cake base on top. Spread the remaining whipped cream on top and decorate with berries/fruits.

Vary the fillings according to the seasons, e.g. with fresh strawberries, blueberries and raspberries or with kiwi and canned peaches.
