Salmon with pesto sauce

Ingredients

210 g Mummon mash mashed potato powder
11 dl water / 6 dl milk and 6 dl water
1 tbsp margarine
2 tsp salt
Salmon fillet 150 g /person
Oil and butter for frying

Pesto sauce
2 dl Olive oil
2 dl Parsley
1/2 Lemon juice
2 tbsp Parmesan cheese
1 tbsp Salt
pine nuts
black pepper

Preparation

Mashed potatoes

Mix 2 sachets (total 210 g) of mashed potato powder into boiling water (11 dl water or 6 dl milk and 6 dl water). Let it settle for a moment. Add, for example, butter to taste and enjoy.

Salmon and pesto sauce

Put the oil into the blender. Add the parsley leaves to it. Blend in the blender until smooth. Add the lemon juice and grated Parmesan, as well as the seasonings. Check the taste.
(You can add pine nuts to the blender at the end and blend the sauce until smooth).

Fry the salmon fillet in a butter-oil mixture in a non-stick pan for about 6-8 min depending on the thickness of the fillet. Arrange mashed potatoes on the bottom of the plate. Place on top a salmon fillet with a nice browned color. Put pesto sauce on top of the salmon fillet. Garnish with lime wedges and an herb sprig, etc.
